From the Bierzo region of Spain, this is 100% Mencia fruit sourced from a single vineyard. The vines are over 100 years old and grapes are harvested by hand. Grapes are mostly destemmed, but a proportion are added as whole bunches. After crushing and a few days cold maceration, fermentation is spontaneous using natural yeasts.
