This extraordinary white wine from the Willamette Valley is a white wine made from a blend of three different grape varieties: 72% Auxerrois, 19% Pinot Gris and 9% Pinot Noir all grown in the same block of vines.
The end result is this white "field blend." There was a mix of fermentation and aging in Acacia barrel, Stainless tank and Neutral French Oak, with native yeast fermentation, no filtering or fining, no additions except a tiny bit of SO2.
This natural white is tart and refreshing, with just enough weight in the mid palate to make it incredibly versatile with light as well as heartier foods like grilled chicken or pork, or a charcuterie or cheese plate.
